SALAD RECIPES THAT WILL MAKE YOU GLOW
We all know that a salad diet can get pretty boring fast. We all need that little something (mostly, chocolate) to perk us up and break the monotony. Our solution is to ensure that our salads are not just healthy but also taste delish. We put together three salad recipes that you can eat everyday along with following your regular diet for a healthy skin glow. And you might just find that you no longer reach for that after-dinner dessert.

Spinach fruit and nut salad

  • 2 cups baby spinach leaves
  • 3 to 4 ounces cooked chicken breast, sliced
  • 1/2 apple, thinly sliced
  • 2 tbsp dried cranberries
  • 2 tbsp chopped walnuts lightly toasted
  • 1 tbsp toasted sunflower seeds
  • 2 tbsp Blue Cheese Dressing
Toss together all ingredients in a large salad bowl.

Chickpeas and zucchini salad

  • Cooked chickpeas
  • 2 big handfuls of baby spinach leaves
  • 1/2 avocado, diced
  • 1 small handful of almonds, soaked in water overnight
  • 1 zucchini, sliced into 1/2 cm disks
  • Olive oil
  • 2 tablespoons unhulled tahini
  • 1/2 lemon, juiced
  • Water
  • Pinch of salt
  • 1 small garlic clove
  • Freshly ground black pepper
Lightly brush the zucchini slices with olive oil and grill on a pan for a couple of minutes. Combine the tahini, lemon juice and grated garlic in a small bowl. Add enough water to form a smooth, runny dressing. Season with a pinch of salt and pepper. Coat the chickpeas with the tahini dressing. Top with tahini coated chickpeas, diced avocado and the zucchini slices. Sprinkle with the soaked almonds.

Lettuce and radish sprouts salad

  • 1 head romaine lettuce
  • 1 small bunch arugula
  • ½ cup freshly chopped flat leaf parsley
  • 6 freshly chopped basil leaves
  • 1 carrot, thinly sliced
  • 1 stalk celery, thinly sliced
  • ¼ cup radish sprouts
  • 1 fennel bulb, thinly sliced
  • 1 tsp toasted sesame seeds
Toss all the ingredients in a salad bowl and serve immediately.
