We’re sure that all your major shopping, planning and fretting is behind you, so all you really need to focus on is getting into shape, literally speaking. And while we’re sure you’re making it to your Cross Fit class—there’s another simpler way to narrow down that waist-size, and that is by eating right. We spoke to some of our favourite chefs from Café Infinito, Hakkasan and the Grand Hyatt to bring you three fabulous salad dressing recipes, so that while you get into detox drive, you have some serious delicious fun with it. Crispy Mock Duck Salad Dressing by Chef Karishman Chemburker (Hakkasan)

“This is a refreshing salad that awakens the senses; it is guaranteed to make you feel energised and beautiful from the inside out,” says Chef Karishman.

Make a salad out of mock meat, which is made purely made from soya, mixed micro greens, pomelo, pomegranate and pine nuts. For the dressing, you will need:

  • Plum Sauce: 300 Grams
  • Rice Vinegar: 50 Grams
  • Light Soya: 50 Grams
  • Hoisin Sauce: 100 Grams
Mix together well and pour over your salad for a delicious, filling and healthy lunch.

Mango Dressing by Chef Rajib Mazumder (Executive Sous Chef, Grand Hyatt, Goa)

Mango is one of the most loved fruits, so if you are a bride-to-be on a strict diet why not spruce up your salads with a vibrant mango dressing that is packed with flavour. Apart from being flavourful, mango also has other benefits. Mango has a lot of vitamins and nutrients that help the body feel fuller. Also, the fibrous fruit boosts the digestive function of the body by burning additional calories, and helping in weight loss. It has a combination of vitamin C, vitamin A and 25 different kinds of vitamins to boost your immune system,” says Chef Rajib.

  • Olive Oil: 30 ml
  • Mango Juice: 100 ml
  • Mint Leaves (chopped): 10 Grams
  • Salt: To Taste
Mix together the ingredients and enjoy this tropical dressing on fresh greens, rich proteins or shellfish.

Honey and Goat Cheese Dressing by Chef Krishna Khetle (Café Infinito)

Honey is nature’s energy booster—it is a great immune system builder and a natural remedy for many ailments. When it comes to fat and calories, goat cheese has the advantage over cheese made from cows milk and it also plays and important role in brain functioning,” says Chef Krishna.

  • Goat Cheese (fresh and creamy): 2 Tablespoons
  • Honey: 1 ½ Tablespoons
  • Extra-Virgin Olive Oil: 2 Tablespoons
  • Balsamic Vinegar: 2 Teaspoons
  • Lemon (juiced): ½
  • Water: 1 Tablespoon
  • Salt: To Taste
  • Freshly Ground Black Pepper: To Taste
In a small blender, combine the goat cheese, honey, olive oil, vinegar, lemon juice, water and season it with salt and plenty of freshly ground black pepper. Mix until fully combined and creamy.  You can enjoy this dressing with a poached pear and rocket salad.
